An Italian classic, revised for better health
Yield: 8 servings
| 1 | lb. | dried pasta | |
|  | |||
| 1/4 | cup | olive oil | |
|  | |||
| 5 | large cloves garlic, minced | ||

| salt to taste | |||

| chopped fresh parsley | |||
|  | |||
| hot red-pepper flakes | |||
|  | |||
1.  While the pasta is cooking, heat the olive oil in a small skillet and add the garlic cloves.  Saute for 1 minute.    
2.  Pour the mixture over the cooked, drained pasta and combine well.  Season to taste with salt.    
 
Optional:  consider sprinkling with hot red-pepper flakes or chopped fresh parsley.
